This refreshing zucchini pasta salad is packed with fresh basil flavor and is extremely high-volume, so it will leave you satisfied and full. Plus, it is super delicious!!

Yield: 1 serving 

 

Ingredients: 

- 160g zucchini noodles (spiralized zucchini)
- 80g fresh diced tomato
- 28g low-fat mozzarella cheese
- 15g pesto sauce
- 2-3 leaves fresh basil, finely chopped 
- 130g grilled chicken 

 

Directions:

1. Cook zucchini noodles over stove-top until desired tenderness, then refrigerate for at least 10 minutes to let cool.
2. Add all other ingredients and stir well. So EASY. ENJOY!!
