Protein Mini Chocolate Chunk Donuts

If you've been to pretty much any grocery store lately, you may have noticed those cute little girl scouts selling their Thin Mints...but if you've got fitness goals you know you shouldn't be buying them, let alone even looking at them (the temptation is real). But what if you could get some minty goodness but not cheat on your diet?

Well that's where these delicious protein mini doughnuts come in! They'll satisfy your cravings and keep you on track!

For this, make sure you pick up some Mint Chocolate Quest Bars and some Vanilla and Chocolate Quest Shakes from the CNU Fit store!

Ingredients:

DONUT

  • 1/2 cup sugar free sweetener
  • 1/4 cup coconut oil, melted
  • 1/4 cup unsweetened applesauce
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 Mint Chocolate Chunk Quest Bars
  • 1/4 teaspoon Baking Soda
  • 1 cup almond milk
  • 3/4 cup almond flour
  • 3 Scoops Quest Chocolate Milkshake Protein Powder

GLAZE

  • 1/3 cup Quest Vanilla Milkshake Protein Powder
  • 3 Tablespoons Greek yogurt
  • 2 Tablespoons almond milk
  • 1/2 cup baby spinach
  • 1/2 cup fresh mint leaves

Directions:

  1. Pre heat oven to 425
  2. Break Quest Bars into small pieces and place onto a nonstick baking sheet. Bake for 3-4 minutes, Remove to cool.
  3. In a food processor, add baked Quest Bar pieces, Pulse until crumbs are achieved.
  4. Add quest bar pieces, sugar free sweetener, coconut oil, applesauce, eggs, vanilla, and salt to a medium bowl and stir until well combined.
  5. Add baking soda, almond milk, almond flour to the bowl, and quest milkshake protein powder slowly stir until well combined (batter should be thick like cookie dough) add a little more protein powder if necessary.
  6. Add batter to a piping bag or ziplock bag with an end cut off and pipe batter into a oil sprayed doughnut pan 2/3 of the way full.
  7. Bake doughnuts for 8-16 minutes, set aside to cool while you make the glaze.
  8. Add glaze ingredients to a food processor and pulse until smooth.
  9. Frost cooled doughnuts with glaze.
  10. Sprinkle doughnuts with chocolate and 1-2 whole mint leaves for garnish.

NOTES: try this recipe with different Quest bars, just mix up the type of shakes you use and get rid of the mint in the glaze!
