Recipe: Protein-Packed Chocolate Chip Cookies

  1. 60g vanilla ISO 100 protein Powder
  2. 6 tbsp. coconut flour
  3. 2 tbsp. Pyure organic stevia blend = ¼ cup baking stevia or sugar
  4. 2 tbsp. Truvia brown sugar blend = ¼ cup brown sugar
  5. 1/2 tsp. baking soda
  6. 1/8 tsp. salt (optional)
  7. 1/4 cup light butter, softened (I used Smart Balance; can also use butter or ghee)
  8. 1 whole egg
  9. 1/4 tsp. vanilla extract
  10. 1 oz. dark chocolate chips (60% cacao)


  1. Preheat oven to 350 degrees F.
  2. Whisk together dry ingredients (through salt) in a mixing bowl.
  3. Mix in wet ingredients (through vanilla) to form a dough.
  4. Fold in chocolate chips.
  5. Lightly coat baking sheet with cooking spray.
  6. Place twelve rounded tablespoons of dough onto sheet a couple inches apart. Press flat just slightly.
  7. Bake for 8-10 minutes until edges are golden brown. Enjoy!
