Serving Size: 1 burrito

Bring some spice to your breakfast table! Feel free to get creative with this recipe and swap your personal favorite vegetables. You really can’t go wrong with this one!

 

 

Ingredients:

– 1 high fiber low carb wrap (You can use p28 wrap or mission brand carb balance wrap)
– 30g chopped red bell pepper
– 14g low fat cheddar cheese
– 50g chopped yellow squash
– 61g broccoli
– 30g salsa
– a dash of garlic salt and cumin
– 210g egg whites

Directions:

1. Spray a pan with olive oil and cook vegetables over stovetop on medium high heat.
2. When vegetables are cooked, add egg whites, garlic salt, and cumin.
3. Assemble cooked egg whites/veggie mixture into the burrito and add cheese quickly, so that it melts.
4. Add salsa and roll into a burrito! Enjoy!
